Easily Available Egg And Sugar Substitutes In Baking

EGG SUBSTITUTES

If you are a vegetarian or allergic to eggs, or simply do not like the taste. This problem will not come in the way of your baking dreams.

An egg is a versatile ingredient that acts as a

  • Binding agent
  • Leavening agent
  • Provides a structure to the dish

Few things to keep in mind.

  • If you do not want to put eggs. Then research for already eggless recipes. These recipes are written after trials making them easier for you to follow.
  • An egg does not have a single substitute. For example, if you use mashed bananas in place of the egg for a chocolate cake. It works fine. But you cannot use them in making macrons.

So, here are some easily available alternatives to the egg. Along with their usage notes.

  1. Flax Egg

It is a great alternative. You will need two ingredients.

  • Ground flax seeds.
  • Water

Preparation

The ratio is very important. For the substitute of one egg, you will mix 1 teaspoon of ground flaxseeds with 3 teaspoons of water. Gives it two to three good mixes. Its consistency will become exactly like an egg.

Use:

Use it in cookies to give them a nice structure.

2. Chia Egg

The method of preparing a chia egg is similar to that of a flax egg. Mix 1 teaspoon of whole chia seeds with 3 teaspoons of water for the substitute of one egg. Chia seeds have the property to absorb all the water and forming a gel-like consistency.

Two things to note while using chia egg.

  • It takes longer for chia seeds to swell.
  • Chia egg will make goodies denser. Use them in cookies or brownies. But not in cakes.

3. Mashed Bananas

You can use 1/4th cup of mashed banana in place of one egg. They will provide more sweetness to your desserts.

Use:

Mashed bananas go well with chocolate cakes, pancakes, or some peanut butter goodies. Remember banana will taste after the result. So, use it only in those recipes in which you are okay with the banana taste.

4. Yogurt

Replace 1/4th cup of yogurt in place of one egg. Yogurt will not only make your cakes rich and fluffy but also gives a nice taste.

Use:

Use Greek yogurt or hung curd in sponge cakes.

Tip:

Add a pinch of baking soda to curd. The resulting reaction will make your cake lighter and fluffier.

5. Buttermilk/Sour cream

Buttercream is a good dairy source to make your cakes soft and moist. Replace one egg with 1/4th cup of buttermilk/ sour cream.

Use:

Add it to pancakes and waffles.

6. Apple sauce

Applesauce is also a great alternative. It does not taste like an apple.

If it is not available in the market, prepare your own by following the method below.

7. Aquafaba

Aquafaba is the leftover water from a chickpea can. It has a high protein content functioning exactly like an egg white.

Use:

Use them in making meringues, macrons, or cheesecakes.

8. Condensed milk

Condensed milk is rich in fat content making the cakes fluffy.

SUGAR SUBSTITUES

Refined sugar is one of the unhealthiest foods we consume. It is not only harmful but addictive as well. It also increases the risk of type 2 diabetes.

But if you have a sweet tooth or you love baking, so you just must replace them with healthier alternatives.

  1. Coconut Sugar

Coconut sugar is derived from coconut palm trees without further processing or adding chemicals.

Health Benefits:

  • It is more digestible.
  • It provides vitamins and minerals as well.

2. Date Sugar

Date sugar is derived from one of the sweetest fruits available.

Health Benefits:

  • It is extremely nutrient-rich.
  • It reduces cholesterol and bone density as well.

3. Mishri/Rock sugar

Mishri is chemically unrefined sugar. You can use them in any of the goodies in which you are putting refined sugar. Remember to buy thread mishri only.

Health benefits:

  • It consists of minerals, fiber, and antioxidants.
  • It increases digestion and hemoglobin level too.

4. Honey

The composition of honey is similar to that of human blood. That is why it assimilates better.

Health benefits

  • Nutrient-rich
  • Reduces fat and increases mental alertness.
  • Anti-bacterial properties

5. Stevia

Stevia is a zero-calorie natural sweetener extracted from the leaves of the stevia plant.

As it has no calories it is perfect for weight watchers and health-conscious people

It is the healthiest alternative of sugar.
